Potong occupies a five-storey Sino-Portuguese shophouse on Vanich 1 Road in Chinatown, a building that housed Chef Pam's family herbal medicine business since 1910. The ground floor still holds the original medicine jars and carved wooden ceiling. Upstairs, the second-floor dining room keeps its aged wooden dividers and amber bottle collection, and each level shifts the mood: intimate glasshouse on three, the Opium Bar on four, and a breezy Chinatown rooftop at the top. The 20-course tasting menu weaves Thai and Chinese technique through a five-element philosophy. Expect smoked duck aged for two weeks, hand-pulled noodles dressed in fermented shrimp, and a rotating parade of seasonal seafood that leans harder on southern Chinese tradition than most Bangkok fine dining dares to.

Insider Tip

Book the second seating if you want to linger. The first turn starts at 5 PM and can feel slightly rushed; the later group gets the run of the rooftop after dinner with views over Yaowarat's neon. Ask about the wine list early. The cellar pulls from 15 countries and includes unusual natural picks that pair surprisingly well with the heavier spice courses.
