Fuego sits on the second floor of The Taste Thonglor on Soi 11, and walking in feels like stepping into a different city entirely. The room is built around a central open kitchen with a curved copper hood that spirals above a horseshoe-shaped counter. The walls are clad in stacked dark wood blocks, the lighting stays low, and you hear the grill before you see it. Roger Sole cooks Spanish food through a Japanese lens, all live flame, and the tasting menu moves through shellfish, aged beef, and charcoal-grilled vegetables with a precision that matches the room. The energy builds as the night goes on.

Insider Tip

Book through SevenRooms. Counter seats go fast, especially Thursday through Saturday. The 3rd anniversary menu runs in late March if you catch it. Ask for the booth if you want to settle in rather than sit at the counter.
